We are starting to think about our Valentine's Day party and I decided that it would be fun to do another jello. The apple cider jello from our Halloween party was a big hit, so I decided to use some frozen strawberries from the summer. It tastes like the summer which is always a nice treat in the middle of winter. It is also the prettiest red color which makes it the perfect dessert for Valentine's day. It doesn't need any whipping cream, but it is definitely a nice addition. Either way, it is still low sugar and delicious!
Strawberry Jello
6 1/2 cups fresh strawberry juice*
6 envelopes knox gelatin
2 tbsp lime juice
5 tbsp honey
fresh whipping cream (optional)
*I thawed 4-6 cups of frozen strawberries and put them in a blender until they were smooth. Strain the juice before using in the jello.
Directions:
- In a large bowl, add 3 cups of the strawberry juice. Place the gelatin on top and wait for it to be absorbed by the strawberry juice.
- Meanwhile, add the rest of the strawberry juice (3 1/2 cups), lime juice, and honey in a pot and bring to a bowl.
- Add the gelatin mixture to the boiling juice and stir until all of the gelatin is dissolved.
- Remove from heat and pour into heat proof dishes. Let set in the refrigerator overnight. Serve plain or with fresh whipping cream. Enjoy!
