Last year my new years resolution was to try 2 new recipes a month. Although I didn't keep track, I am sure I made at least 24 new recipes. I also focused a lot of my attention on baking. I love spending my mornings baking, but when it comes time for dinner I struggle. I find myself making lots of green smoothies to make up for my subpar dinners. This year I am challanging myself to make 52 new recipes which equals out to one new recipe a week. I want to get excited about cooking the same way I get excited about baking. I'm sure some of my 52 new recipes will be baking, but I'm making sure I include a lot of healthy options as well.
This week I have already made 4 new recipes. I found the first 3 recipes in Gwyneth Paltrows cookbook which I borrowed from our library.
Here is what I have been busy making in our kitchen:
- Roasted Cauliflower: so simple to make and so delicious. I am excited to experiment with more side dishes.
- Oven Roasted Tomatoes: these were also simple to make and I was surprised at how full of flavor they were for winter tomatoes.
- Slow Roasted Tomato Soup: I used my oven roasted tomatoes to make this soup. Ryan and I found this soup to be bland and added some butter and brown sugar. This made it wayyyy better in my opinion.
- German Pancake: This recipe was amazing! We got a cast iron skillet for Christmas and it has been so much fun to cook with. I have already made this recipe twice! I also added a handful of blueberries which goes perfectly with the fresh lemon juice.
